Tiramisu with twinkies instead of lady fingers


1 bx Twinkies

¼ cup mascarpone

¾ cup heavy cream

1 tbs. cognac

½ cup powdered sugar

2 cup espresso or strong coffee

1 tsp. vanilla extract

1 cup Kahlua

6 eggs separated, yolks only

Espresso powder for dusting


  1. In tailpot heat Kahlua, 1 cup espresso, powdered sugar, and vanilla extract until boil
  2. Slowly temper the hot liquid into the egg mixture
  3. In large mixer whip heavy cream until it forms stiff peaks, reserve in another bowl
  4. In large mixer combine mascarpone and ricotta mix until smooth, add egg-espresso liquid until combined. Add whipped heavy cream until combined.
  5. Place the remaining 1 cup espresso in a shallow dish. Cut twinkies in ½ and dip in coffee. Layer a glass or pan with mixture and place dipped twinkies on top. Place the remaining mixture on top and dust with espresso powder and garnish with non-dipped twinkies.
