Italian Style Wings Chicken & Sun-Dried Tomatoes

Rob Lagonia, of Lagonia's Restaurants in Loudonville and Chatham, makes a pair of delicious Italian recipes with Dan in the Let's Eat Kitchen.

Italian Style Wings

  • Jumbo Wings
  • Pinch of salt
  • Pinch of black pepper
  • 5 table spoons olive oil 
  • 1/4 of a red onion
  • Half a tea spoon of garlic
  • 4 ounces of hot cherry peppers sliced
  • Pinch of oregano

Bake the wings till crispy; salt and pepper them.

Saute onions, garlic, salt, pepper, oregano, hot cherry peppers.

Once wings are crispy, toss into cherry pepper mixture top with parsley.

Serve.

Chicken and Sun-dried Tomatoes

  • 6 oz chicken breast
  • 4 oz of roasted peppers
  • Big hand full of spinach
  • Pinch of salt 
  • Pinch of black pepper
  • Tea spoon of garlic
  • 1/4 stick of butter
  • 4 tablespoons of olive oil
  • 1/2 cup of chicken stock
  • 3 oz sun-dried tomatoes
  • 6 oz of white wine

Saute sundried tomatoes in olive oil and garlic.

Add in chicken.

Salt and pepper.

Brown chicken.

Add in garlic.

Let garlic brown.

Add in white wine.

Add in chicken broth.

When chicken is just done, add in roasted peppers.

Add spinach.

Add 2 tablespoons of butter.

Toss with penne.

Top with parsley.

3 oz of top with grated cheese.
