-1 lb. Dry Black Eyed Peas

-Smoked Meat (Turkey or pork, approximately 1/2 lb.)

-Salt (to taste)

-Tablespoon of Pepper

-1/2 Tablespoon of Bouillon 

-1 Tablespoon Flour


Thoroughly rinse black eyed peas to clean them. Place in a roughly 5quart-sized pot. Add smoked meat, salt, pepper and bouillon. Fill pot with water.  Cover pot.

Cook on medium heat for about 1 hour, checking occasionally to ensure that water has not completely reduced. If water has been completely absorbed, add 1 cup of water and continue cooking. After the 1 hour has passed, reduce heat to "low," remain covered and simmer for two additional hours or until tender. Again, monitor your water level so the mixture doesn't run out of water and burn.

Whisk flour into black eyed peas briskly to avoid clumping. This will thicken your mixture. Simmer on low for 10-12 minutes. Remove from heat and let rest for 10 minutes while covered. Serve over white rice or with a slice of cornbread. Enjoy this delicious southern dish!
