Herb roasted 90 minute turkey

12-13 Pound Fresh Turkey

  2 oz Fresh Herbs

12 Whole Garlic Cloves (lightly crushed)

  8 oz Carrots (cut into 3” pieces)

  8 oz Celery (cut into 3” pieces)

12 oz Onions (cut into quarters)

 Kosher Salt (to taste, but don’t be skimpy)

 Black Pepper (to taste)

20 oz Dry White Wine (a whole bottle, minus 5 oz for the chef)

48 oz Chicken or Turkey Stock or Water

Extra Virgin Olive Oil (as needed)


Preheat oven to 375F

  • Cut backbone from the turkey with a pair of kitchen shears.
  • Press flat from the breast section using generous force. 
  • Place bird in large roasting pan.
  • Rub turkey with olive oil
  • Season liberally with salt and pepper.
  • Place fresh herbs and garlic cloves on and around turkey.
  • Add stock and wine to roasting pan.
  • Place in preheated oven for about 90 minutes, basting every 30 minutes.
  • Rest Turkey 30 minutes minimum before carving.
  • Strain Juices for gravy
