Carne asada tacos

Salsa roja


Avocado salsa

Skirt steak 1#

Blue corn tortillas 1 package

Avocado salsa

 1 qt Salsa verde crudo

2 each avocado

1 cup sour cream

Cut and remove avocados from skin and add to food processor

Add crudo to food processor with half of sour cream and blend til smooth  pour into bowl and fold remaining sour cream  into the bowl

Salsa roja

1qt fire roasted tomatoes

4 guajillo chiles

2 morito chiles

 1tbsp Oregano

1tsp cumin seed

1/2 cup garlic puree

1/3 salt

1/3 cup sugar

1/2 cup apple cider vinegar

1qt water

1)remove  stems and seeds from chiles

2)preheat cast iron for 5 mins then add cumin and oregano toast for 15 seconds then remove 3)Return skillet to stove and toast chiles for 45 seconds then remove 4)Place chiles in bowl for half hour submerged in water 5)Toast 1 cup of garlic skin on until it starts to blacken let cool then remove skins

6) Drain chiles and place all ingredients in blender until smooth strain through fine mesh net and ready to serve

Salsa verde cruda

1# tomatillo

12 oz white onion

3oz jalepeno

1/4 cp garlic gloves

3oz cilantro

1/4 cp lime juice

1/2 tbsp honey

1cp water

1)Remove stems and seed from jalepenos and rough chop 2)Peel skins from tomatillo and rough chop them along with the onions 3)Put all ingredients in the blender and puree until smooth
