Season the roast with salt and pepper to taste and any other herbs or spices that you enjoy with your roast beef. You can also season only with the salt and pepper. Sear the roast by placing it in a 450 degree oven for 10-15 minutes, then turn the temperature down to 350 degrees. Allow the meat to cook to an internal temperature of 120-125 degrees and remove it cover it with foil and let it rest for 30-40 minutes. It will continue to cook while it’s resting to medium rare.
Slice the peppers and onions, depending on how many sandwiches you’re making, and sauté them in a hot pan or place on the grill to desired tenderness. Slice the beef and add it to the peppers and onions, top with provolone cheese and place it in the roll. Add the condiment of your choice and enjoy.
