What an easy way to prepare seafood. Our visit on the Let’s Eat Kitchen shows how to make it in parchment paper but, you can absolutely make the same recipe in aluminum foil on the grill. Use any fresh seafood, adjusting the time at 400 degrees based on the thickness of the fish. You should cook for 12 minutes for every inch of fish (plus toppings). This recipe should take 14 minutes. Ingredients: 2 eight ounce portions of any light white fish (cod, haddock, halibut, grouper, sea bass) 2 sheets of parchment paper or aluminum foil 1 tsp Olive oil Salt and pepper ½ Shallot - sliced thin 12 leaves Basil – fresh, rolled and sliced thin, crosswise 1 T parsley – rough chopped Squash – sliced into 8 thin rounds 1 clove garlic - rough chopped 4 T Prosecco or white wine 6 cherry tomatoes – halved 
Preparation:  Fold parchment paper in half, then in half again, leaving you with a work surface about 14 x 20. You will be working on the top half above the fold. 
Spread a bit of olive oil onto the parchment and lay your fish fillet on it. Top with each of the above ingredients, in the order they appear. Then, it’s time to begin creating your pouch for steaming the fish. Fold the other half of the parchment over your seafood. Begin folding the parchment/ aluminum foil in one corner, folding one fold into the next and into the next, until you have worked your way around the paper to the opposite corner. Twist/fold the last corner to seal your meal inside. Leave some room in your packet for it to puff up in the oven, don’t wrap it tightly. Now, it will steam with all those flavors inside! Place your folded packets onto a baking sheet and bake for 12-14 minutes in preheated oven. If you are using parchment, it will begin to darken. That’s perfect! Serve by setting each packet on a plate. Let your guests carefully open the packet (like a bag of potato chips) and spoon juices over the fish. Voilà — drama as well as flavor. Enjoy!
