Grilled Peach and Arugula Salad

1 Peach, halved and grilled

1C Toasted Sunflower Seeds

6C Baby Arugula, washed

Handful of Fresh Mint

1C Citrus Mascarpone** 

1 Lemon, zested and juiced

Light Drizzle of EVOO

Salt and Pepper to Taste

After grilling the peach, let cool and set aside. Combine all the other ingredients in large serving bowl. Slice one halve of the peach and add to the bowl. Garnish with a few dollops of Citrus Mascarpone and the other half of grilled peach.

**Citrus Mascarpone

1C Mascarpone Cheese

1 Navel Orange, zested and juiced

2 Meyer Lemons, zested and juiced

Salt and Pepper to Taste
