Shaved Asparagus and Baby Spinach Salad 

from Hollow Bar and Kitchen

3-4 Green Asparagus, shaved

3-4 White Asparagus, shaved

2 handfuls Baby Spinach, washed

2 Navel Oranges, cut into segments

1 Meyer Lemon, cut into segments

5-6 Morel Mushrooms, sautéed*

1 Cup Roasted Pepper Purée**

Drizzle of Sherry Vinegar Reduction***

*sauté with butter, salt, and pepper

**Roasted Pepper Purée

3-4 Orange Bell Peppers

Olive Oil


Black Pepper

Toss Peppers with olive oil, season generously. Transfer peppers to a sheet tray and roast in oven on 400. The skin will blister and begin to blacken. Peel skin and add to a blender. Blend until smooth.

***Sherry Vinegar Reduction

2 Cups, Sherry Vinegar

1/2 Cup, Sugar

1/4 Cup, Whole White Peppercorns

Pinch of salt

Bring all ingredients to a boil in a small tail-pot. Reduce heat and let simmer until liquid is reduced to 1/3 the amount.
