COPAKE - The current owner of Dad's Diner in Copake bought the 20-year-old restaurant just two years ago.
Not surprisingly, Brian Peacock's long-range plans did not include navigating through a pandemic. However, that's just what he did and he found new windows of opportunity to stay open for business.
Peacock says he will put the Dad's Diner burger up against the best. He says it all starts with fresh beef every day. There's also wings, onion rings, and other fun food.
Not fun though, was figuring out all the changes that came from coronavirus shutdowns. However, they pulled it off by offering delivery and curbside pickup, which their seasonal ice cream window was perfect for.
They also started a sort of grocery service offering the food and supplies they had for sale to customers.
Now that outdoor dining is so important, they've gotten a tent to grow their numbers. However, Peacock figures going back inside is what most people are looking forward to.
No matter what, Peacock says the tent and pickup and delivery are going to stick around the rest of the season since not everyone may be ready to go back inside.
