Bacon Jam Scallops

For a single portion-

Sea Scallops- 4 ounces (about 3-4 each)

Bacon Jam- 1 ounce (Recipe Follows)
Watermelon Radish-3 slices (shaved thin, roasted at 200°F until crisp)

Yum Yum-1 ounce ( Recipe Follows)

Purple Sun Farm Micro-Celosia-Garnish as desired

Directions

  1. Sear scallops in 1 Tbls. of neutral flavored oil

              (Start with high heat, and hot pan. Add seasoned scallops, sear until golden brown, flip onto opposite side, lower heat and continue cooking until fully cooked)

  1. Warm bacon jam
  2. Drizzle with yum yum sauce
  3. Top with roasted radish and celosia

Bacon Jam-

Bacon, chopped-1 lbs.

Red Onion, thinly sliced-1 large

Brown sugar-¼ cup

Cayenne-? tsp

Balsamic Vinegar Reduction-2 oz

Kosher Salt-To Taste

Black Pepper-To Taste

Directions:

  1. Render bacon by 75%
  2. Remove bacon with a slotted spoon
  3. Add red onions
  4. Saute on a med heat until slightly translucent, onions should still be al dente
  5. Return bacon, continue cooking on low heat.
  6.  Once onions begin to caramelize and soften, add remaining ingredients
  7.  Season with salt and pepper

            Yum Yum Sauce-

Mayonnaise-1 cup

Maple Syrup-1 tsp

Garlic Powder-½ Tbls

Smoked Paprika-½ tsp

Water-1 Tbls

Ketchup-2 Tbls

Cayenne Pepper-¼ tsp

Directions:

  1. Mix all ingredients together
