Clean each yam and peel completely. Rinse after peeling and then chop into cubes. Pour into pan: a deep 8"x8" baking dish would be preferable. Pour vanilla, nutmeg, cinnamon, sugar, and 1 stick of butter on top of yams. Using your hands, mix together thoroughly so that seasonings are spread evenly throughout. Bake covered with foil at 375degrees for 1.5 hours or until all yams are tender. Upon removal from the oven, immediately add remaining 1/2 stick of butter to yams. Mix in butter by using the "folding-over" technique so as not to break up or smash the yams. Serve and Enjoy!
