Baked Haddock with Mayo-Parm Crust

Baked Haddock with Mayo-Parm Crust from Fin - Your Fishmonger




  • 2  8oz. fillets of haddock ~ preferably fresh & only sustainable
  • 1t lemon juice
  • salt and pepper
  • ½ c. mayonnaise
  • 1t prepared mustard (Dijon, yellow, whatever kind you’d like)
  • 1/2 c.  fresh grated parmesan cheese (pre-grated parm often has plastic in it to keep flakes separate – we don’t want that in our food/body – grate it yourself!)
  • Dash paprika


  • Preheat oven to 400 degrees.
  • Pat the haddock dry and place fish into foil-lined pan.
  • Squeeze fresh lemon juice on each fillet and season with salt and pepper.
  • Mix together mayo and mustard in a small bowl with a spoon.
  • Dollop mixture onto fillets and spread edge to edge with your mixing spoon.
  • Sprinkle parmesan cheese over the mayo topping.
  • Add a few dashes of parmesan to top it off.
  • Bake at 400 degrees for 20 minutes.


  • chopped fresh oregano, sliced Kalamata olives and minced garlic; or
  • capers, sautéed red onion, black sesame seeds, poppy seeds; or
  • soy or tamari sauce, grated fresh ginger, hot pepper flakes; or
  • chopped jalapeno, cilantro, thin-sliced sundried tomato, grated lime zest
