Chef Augie Vitiello, of Augie's Restaurant in Ballston Spa, prepares his take on Fried Stuffed Zucchini Flowers with Dan in the Let's Eat Kitchen.

Fried Stuffed Zucchini Flowers


Fresh zucchini flowers

Cup of ricotta 

2oz smoked mozzarella 

1 oz sun dried tomato

1 oz parmigiano cheese

Tsp minced garlic

Tsp fresh basil

Combine all the ingredients in a mixing bowl. Mix well, and scoop a table spoon of stuffing into the open flower. Crimp the top of the flower to keep the stuffing in. Prepare a simple batter with beer, flour, herbs, salt and pepper. Dip stuffed flowers into the batter and fry until golden brown in hot oil, at app. 325 f.

Serve hot with marinara sauce.
