LJ Goldstock, of LT's Grill in Niskayuna joins Dan to make Parmesan Crusted Salmon with a creamy Mushroom Risotto in the final Let's Eat Kitchen from the current set.

Parmesan Crusted Salmon with Mushroom Risotto
8oz Salmon
Oil
Parmesan Cheese
Cooked Risotto
Chicken Stock
Heavy Cream
Sundried Tomatoes
Scallions

Crack the risotto and cook until tender. Let cool.
Take 8oz salmon and dredge on parmesan cheese.

In skillet, place oil and get it hot. Place salmon in hot oil approx 2 to 3 min on each side.
Place in oven approx 8 to 10 min, depending on how you like your salmon.

In another skillet, place to 4 to 6 oz of the cooked risotto with 1/4 cup heavy cream and 1/4 cup chicken stock.
Let the risotto absorb. Take 2 to 3 full table spoons of parmesan to make it smooth.

Place cooked risotto in center of plate. Place salmon on risotto. Garnish with sun dried tomatoes and scallion.
