Guilderland bakery specializes in serving people with gluten allergies

GUILDERLAND - Lots of people love cake and other yummy desserts, but can't eat them because they are gluten intolerant. Jessica Smith is one of those people.

Smith was diagnosed six months after entering the prestigious Culinary Institute of America.

She had wanted to become an entrepreneur since she was young. To say it "frosted her" after she realized she couldn't eat any of the desserts she made in class is an understatement.

However, Smith loves a challenge. So after class, she started mixing and spreading and baking -- trying to come up with gluten-free alternatives.

She would graduate and go on to work at a supermarket chain. It would be part of the ingredients she needed to create her own gluten-free bakery, which she opened three years ago in Guilderland. It's called Different Blend Bakery and people love it.

They make everything from scratch -- and create and sell a number of flours so customers can make their own desserts.

Along with making other people's dream of just enjoying a piece of cake or a cookie come true, her hard work has made her own dreams come true as well.
