Blueberry Pancakes

1 egg

1 ¼ cup all-purpose, unbleached flour

1 cup milk

¼ cup brown sugar

4 oz. cinnamon applesauce

1 tablespoon baking powder

1 teaspoon vanilla extract

¼ teaspoon sea salt

1 cup blueberries, fresh

Rinse the blueberries and let dry.

Beat the egg in a bowl with a whisk until fluffy.  Using a whisk, stir together the egg, flour,milk, brown sugar, applesauce baking powder, vanilla extract and sea salt.

Using a spoon stir in the blueberries.

Cook the blueberry pancakes on a preheated griddle that hasbeen treated with non-stick cooking spray or butter.  Cook the pancakes over low to medium heat onone side until it’s toasted and the edges begin to change and the center startsto bubble before flipping to cook the other side and middle of the pancake.

Toppings:  These are delicious alone and do not need syrup.  Syrup is optional!  Try thawed fresh frozen blueberries, no sugar added, as a topping.
