Cheese Beoreg

Ingredients:

  • 1 lb phyllo dough
  • 1/2 c butter melted 
  • 1 egg for brushing

Filling ingredients: 

  • 1 lb Munster cheese (grated)
  • 16 oz cottage cheese 
  • 3 oz cream cheese 
  • 1/2 C. Parsley (finely chopped)
  • 1 egg

Directions:

  1. Preheat oven to 375°
  2. Melt butter over medium heat and transfer to a bowl
  3. Combine all filling ingredients into a bowl 
  4. Take 1 phyllo sheet from stack and arrange on a work surface with a long side nearest you (keeping remaining sheets covered)
  5. Brush with butter and fold into thirds pulling the right and left sides to the center
  6. Brush the surface of the phyllo strip with butter 
  7. Put a heaping teaspoon of filling near 1 corner of the strip on end nearest you, then fold corner of phyllo over to enclose filling and form a triangle. Continue folding strip (like a flag), maintaining triangle shape. Put triangle, seam side down, on a large parchment lined baking sheet and brush top with butter or scrambled egg. Make more triangles in same manner, using all phyllo sheets.
  8. Bake triangles in middle of oven until golden brown, 20 to 25 minutes, then transfer to a rack to cool slightly.
