Chicken Riggies

CHICKEN RIGGIES

YIELD: 4 to 6 servings

PREPARATION TIME: 45 minutes

INGREDIENTS:

1 Lb. PICS Rigatoni (cooked to directions on box)

1 onion, chopped

4 cloves of garlic, chopped

1 stick (4 oz.) of PICS butter

2 boneless chicken breasts, ½ inch cubed

2 hot cherry peppers, small dice

2 green peppers. sliced

1 small can (4 oz.) PICS mushrooms, drained (optional)

1 small can (4 oz.) PICS black olives, drained (optional)

1 small can (15 oz.) PICS tomato sauce

1 pint of PICS heavy cream

Grated Belgioioso Parmesan cheese 1-2 cups

PREPARATION:

  1. Melt butter in large pan
  2. Add onion and garlic and cook until onion is translucent
  3. Add chicken stir and let simmer until chicken turns white, 3 to 5 minutes
  4. Add peppers, mushrooms, olives and simmer until peppers start to soften, 2 to 3 minutes 
  5. Add tomato sauce and heavy cream, cook until sauce starts to thicken, 3 to 5 minutes 
  6. Stir in parmesan cheese
  7. Pour over cooked pasta or add to sauce pan
  8. Serve
