Chicken with Preserved Lemons & Green Olives

Aneesa Waheed of the Tara Kitchen restaurants in Schenectady and Troy makes chicken, Moroccan-style, in the Let's Eat Kitchen.
Chicken with Preserved Lemons and Green Olives:
2lbs boneless skinless chicken thighs
1 large onion - sliced
2 cloves garlic - crushed
2 tbsp oil
1/2 cup water
10 green olives
1 tbsp raisins
2 tbsp parsley - finely chopped
1 tbsp ras-el-hanout
1/4 preserved lemon
Put all the ingredients in a tagine cover and cook on low for 30 minutes. If you dont have a tagine you can use a pot with a good lid on it.
Serve with bread or couscous.
