Chocolate Ganache Tartlets

Short Dough Recipe:

2 1/2 sticks unsalted butter, room temperature

1/2 cup plus 2 tablespoons granulated sugar

1 egg

3 cups all-purpose flour

1/2 teaspoon vanilla extract

1/2 teaspoon salt

Method:

1. Cream butter and sugar till just combined.

2. Add egg and vanilla scrape sides.

3. Add flour and salt mix just till dough forms. Wrap in plastic wrap and refrigerate till dough is cold and firm. Once cold roll out 1/8" thick cut circles and press into tartlet pan. Dock shell with fork before baking to ensure even bake. Bake at 350 degrees till shells are golden brown around edges. Approximately 10-12 minutes. remove let cool and remove from tart pan. Set aside.

Chocolate ganache filling:

8 ounces chocolate chips

1/2 cup heavy cream

Method:

Heat heavy cream till simmering. Pour over chocolate mix till smooth.

Spoon into baked tartlet shells chill till set. serve at room temperature.
