Delicious Summertime Beverages

With the warm weather of summertime comes baseball, backyard barbecuing, and the constant challenge of staying hydrated both for you and your family.  Bottled water, sugary soft drinks, and expensive designer beverages all have their drawbacks, but with just the smallest bit of preparation and planning, you can have your fridge stocked with delicious, natural, and economic liquid refreshment that will impress everyone.

Mint & Lemon Iced Tea:

7 tea bags

2 quarts boiling water

10 fresh mint leaves

1 lemon - sliced

1/2 cup simple syrup - or to taste

Designer iced tea can get heavy on the pocketbook, but making your own is both delicious, cheap, and very very easy.  

Pour boiling water over iced tea bags in a heat resistant glass container.  Muddle the mint by bruising them with a muddler, but if you don’t have one, they can be bruised by using the back of a large spoon or a kitchen mortar and pestle.  Add the mint leaves to the hot stepping tea.  Allow to sit on kitchen counter for one hour.  Remove tea bags.  Add lemon and simple syrup to taste.  Refrigerate and enjoy when chilled.

Basil & Raspberry Lemonade:

Juice of 1/2 large lemon per 1.5 cup serving

Fresh raspberries

1 fresh basil leaf per serving

Simple syrup to taste

Muddle the basil leaf in a glass that can hold 1.5 cups water plus ice.  To muddle the basil, the desired result is a bruised leaf to release its flavor into the beverage.  Next, crush a few raspberries in with the basil.  Add the juice of 1/2 lemon and 1.5 cups cold water.  Add ice and simply syrup as desired and enjoy.

Simple Syrup:

Equal parts sugar and water in a pan over medium heat stirring until all sugar has dissolved.  Allow to cool and place in an airtight container and store in the refrigerator for up to 6 weeks.  Simple syrup is an excellent way to sweeten beverages such as iced tea and lemonade without the grit of trying to dissolve granulated sugar in cold beverages.

Cucumber or Citrus Elixir Water:

1 Cucumber — peeled and sliced into circles

or

1 lemon

1 lime

1 orange

Make everyday “spa day” with this naturally infused water.  Just find a pitcher that will fit in your refrigerator and add either sliced cucumbers (peels off) or a variety of citrus slices (peels on) before topping off with cool water.  Cover with top or cellophane wrap and let chill and infuse overnight.  Serve.  Drink.  Repeat all summer.  This delicious water will last in your refrigerator up to two days.
