Grilled Peach Salad

Grilled Peach Salad

  • 2 ripe peaches
  • 4-5 slices of crispy prosciutto
  • 2 oz blue cheese 
  • Honey hot sauce
  • 2-3 leaves fresh torn basil

Crispy Prosciutto 

  1. Have butcher slice prosciutto thin enough you can see through it
  2. Place parchment paper on a baking sheet tray, lay prosciutto flat on the tray
  3. With another sheet of parchment paper, top with another sheet tray to keep the prosciutto from curling up
  4. Bake at 350 for 16-20 minutes or until crispy
  5. Remove from oven, let cool completely

Grilled peaches

  1. Turn on grill to high heat
  2. Oil the grates
  3. Cut peaches in half
  4. Remove the pit
  5. Brush with oil, balsamic and brown sugar
  6. Place Face down on the grill until caramelized
  7. Remove and set aside

Honey hot sauce

  1. Take your favorite hot sauce 
  2. Use one cup hot sauce and add 1/2 cup honey

TO PLATE SALAD: 

  1. Cut peaches in wedges and arrange on the base of plate. 
  2. Crumble blue cheese over top. 
  3. Arrange the prosciutto crisps around the peaches.
  4. Drizzle honey hot sauce on the peaches and the plate. 
  5. Tear the basil leaves place on top. Serve warm or cold.
