with caramelized onion farro, mango and cucumber relish, citrus Gastrique

1 bunch, Parsley

1 bunch, Mint

3 sprigs, Thyme

Old Bay 

1 Sea Bass Fillet

Farro 

1 sweet onion, diced

2 tbl minced garlic

1C Farro

2.5C Chicken Stock

1 tbl butter, to finish

Citrus Gastrique 

1C citrus champagne vinegar

1/2C Sugar in Raw

4 sprigs, Lemon Balm 

1 Lemon, peeled

Pinch of Red Pepper Flakes

Pinch of salt

Relish

1 Mango, julienned 

1 English Cucumber, julienned

1 bunch mint, chopped 

1C dried cranberries

Splash of citrus vinegar
