What’s on the menu?
Steak Rub by Jodie Fitz
1 ½ teaspoons sea salt
1 teaspoon onion powder
¾ teaspoon garlic powder
½ teaspoon dry mustard
½ teaspoon white pepper
Stir the sea salt, onion powder, garlic powder, dry mustard and white pepper together. Generously coat one side of the steak with the rub; rub it in. Flip the steak over and rub the rest of the rub on that side of the steak. Put it on a plate, wrap it with plastic wrap and let it set in the fridge for two hours (or longer) until you are ready to grill.
Grill the steak. Grilling time will depend on the type of steak, thickness and how you like your meat cooked; rare, medium rare or well done.
Sweet Potato Seasoning by Jodie Fitz
1 teaspoon cinnamon
¾ teaspoon sea salt
½ teaspoon onion powder
Stir the cinnamon, sea salt and onion powder together.
Peel, slice and dice three large sweet potatoes. Coat them lightly with canola oil. Then coat them with the seasoning. Stir to make sure that everything is coated well. Divide the potatoes and put each portion into a foil wrap pouch and put on the grill. Cook for 30 minutes, over medium to low heat.
Grilled Asparagus by Jodie Fitz
Snap the bitter part of the asparagus stem off; towards the bottom. Lightly coat it with 1/8 cup of olive oil that’s been stirred together with one large clove of minced garlic. Add sea salt and grill until the asparagus can be poked with a fork; soft but still crisp.
Beet Salad with Jodie Fitz
Cooked Beets, diced
Honey Goat Cheese, crumbled
Create two layers of salad;
Layer one = spring mix, pistachios, diced beats and honey goat cheese. Repeat.
