7layer-dip

Larry’s All Natural Ranchero Sauce adds the special Mexican flavor to this popular Seven-Layer Taco Dip. It takes minutes to assemble and is sure to be a favorite at any party.

1 16 oz jar Larry's All Natural Ranchero Sauce
1 16 oz can black or pinto beans, drained
2 cups sour cream
2 avocados, pitted and sliced thin for layering
2 teaspoons lime or lemon juice
2 cups shredded Cheddar or Monterrey Jack cheese
4 green onions diced, white and green parts
1/4 cup black olives pitted and sliced
1 tomato, diced
1 bag tortilla chips

1. Spread the beans in the bottom of a 9" square or 10" round serving dish.
2. Spread the cream cheese over the beans.
3. Spread a layer of Larry's All Natural Ranchero Sauce over the sour cream.
4. Layer the avocado slices over the sauce and sprinkle with the lime or lemon juice.
5. Cover the avocado with shredded cheese, then sprinkle the green onions, diced tomato, and black olives over the cheese. Serve with tortilla chips.

Chipotle Beef Enchiladas and Fiesta Corn Salad

Use Larry's All Natural Chipotle Enchilada Sauce to make these deliciously healthy enchiladas served with a refreshing and colorful corn salad.

Larry's Chipotle Beef Enchiladas
1 teaspoon vegetable oil
1 pound lean ground beef
1 16 oz. jar Larry's Chipotle Sauce
12 corn tortillas (not crunchy)
3 cups shredded cheese (Monterrey Jack, mild cheddar or a combination)
1/4 cup minced fresh cilantro for garnish

1. In a large skillet brown the ground beef in oil over medium heat.
2. Add half of the Larry's Chipotle Sauce and cook for five minutes until hot and bubbling.
3. Warm the tortillas by wrapping them in a clean towel and heating them in the microwave for 1 minute.
4. Preheat the oven to 350'
5. Make the enchiladas by spooning equal portions of the meat mixture on each warm tortillas, sprinkle a tablespoon of cheese on each, roll them up and place them in a 10 x 14 baking dish.
6. Pour the rest of the Chipotle Sauce over the enchiladas and top with the remaining cheese.
7. Bake for 30 minutes or until the enchiladas are heated through and the cheese is melted.
8. Serve the enchiladas on a plate with a scoop of the Fiesta Salad. Serves 4.
