New Year Resolution Sushi

Ingredients

1 box of tri colored quinoa

2 tablespoons raw apple cider vinegar

½ teaspoon Himalayan sea salt

Roasted seaweed sheets (nori)

 

Sushi Bar Fillings

Avocados

Mangos

Cucumbers

Red bell peppers

Scallions

Freshly grated ginger

Sautéed shitake mushrooms

Baked wild sockeye salmon

Caramelized red onions

 

Dipping Sauces and Condiments

Coconut Aminos (instead of gluten free soy sauce)

Sesame Oil

Extra Virgin Olive Oil

Gluten Free Pickled Ginger

Gluten Free Sriracha 

 

Directions

Cook the quinoa according to the directions on the box. Once cooked add the two tablespoons raw apple cider vinegar and stir. 

 

Center one sheet of the roasted seaweed, shiny side down, on a piece of plastic wrap. Using the back of a spoon, spread a thin layer of quinoa on the sheet of roasted seaweed, and press into a thin layer. Leave the top 1/2” of seaweed without quinoa.  Arrange your choice of fillings, such as cucumber, ginger, avocado in a line from left to right, about 1/3rd of the way up the sheet of quinoa. Lift the bottom of the plastic wrap, and gently roll it over the ingredients, pressing gently. Roll it forward to make a complete roll. Set the sushi roll, sealed side down, in plastic wrap, to rest in the refrigerator until cold, for about 15-30 minutes. Remove plastic wrap and on a wooden cutting board, cut the sushi roll gently using a sharp knife. 

 

Serve with chopsticks and your choices of dipping sauces and toppings. This is a fun and delicious way to enjoy your favorite healthy ingredients all year long. 


 

Sesame Ginger Dipping Sauce

1/4 cup coconut aminos

1 teaspoon freshly grated ginger

2 scallions, thinly sliced

1 tablespoon pure sesame oil

1 tablespoon extra virgin olive oil


 

Mix together and enjoy.
