Spinach with potatoes and poached eggs

  • 1 medium sliced onion thinly sliced
  • 1 tbs. oil
  • 3 cloves garlic crushed
  • 1 medium potato thinly sliced
  • 1 tsp. ras-el-hanout
  • Salt to taste
  • 1 cup frozen spinach or 1 bunch fresh spinach chopped
  • 8 cherry tomatoes
  • 4 eggs
  • fresh parsley finely chopped
  • A pinch of Black pepper

  1. sauté onions and garlic until golden brown
  2. Add spinach and cherry tomatoes
  3. Season with ras-el-hanout and salt
  4. Cover cook and cook for a few minutes until veggies are wilted
  5. Crack eggs on top of the vegetable mixture and season with salt, black pepper and fresh parsley
  6. Cover and let the eggs cook to desired consistency.


1) With fresh bread or with quinoa.
