Lemon Basil Cucumber Salad

2 large cucumbers, peeled and thinly sliced

1 small onion, thinly sliced

The juice of 1 lemon

2 tablespoons pure maple syrup

7 fresh basil leaves, torn

Himalayan sea salt and freshly cracked pepper to taste

Directions: Place all ingredients together in a large bowl, and gently toss. For the most flavor, cover and place in the refrigerator for 8 hours to overnight. Serve ice cold and enjoy!

Grilled Vegetable Sandwich 

1 eggplant, peeled and sliced lengthwise in ¼ inch thick slices

2 zucchinis, cut in half and sliced lengthwise in ¼ inch thick slices

1 onion, sliced in ¼ inch thick slices

1 red bell pepper, sliced into four pieces 

2 – 4 tablespoons of olive oil 

Himalayan sea salt and freshly cracked pepper to taste

Gluten Free Hamburger Rolls

Vegan Mayonnaise (I used Follow Your Heart Soy Free Veganaise)

Fresh Basil Leaves

Sliced Tomatoes

Directions: Preheat grill to 400 degrees or medium high heat. Place all ingredients together in a large bowl, and gently toss. Grill the vegetables until cooked to your liking. Grill your gluten free rolls until they are light golden brown. Spread a layer of vegan mayonnaise on the top and bottom of the rolls, add fresh basil leaves, Himalayan sea salt and pepper. Layer the grilled vegetables, stacking them from the bottom up to create a delicious sandwich. Top with a slice of fresh tomato, basil leaves and the top bun. Serve and enjoy!

Sparkling Blueberry Lemonade

¼ cup of freshly picked blueberries 

The juice of 1 lemon

2 tablespoons pure maple syrup

Chilled Sparkling water

Rim a glass in pure maple syrup then in maple sugar (coconut sugar or brown sugar). Place fresh blueberries in the glass and gently break them with a spoon. Add fresh lemon juice, pure maple syrup, fresh basil, and sparkling water. Sip and enjoy!

*Quick Tip: Add a splash of premium rum to turn your Sparking Blueberry Lemonade into a cocktail. Must be 21 years or older to enjoy as a cocktail*
