For many, the pandemic has led to the closure of their business.

However, for two Troy men it was just the beginning.

"Seven or eight years ago I talked to myself and I say you know one day you're gonna open my own coffee shop and then I met Jake and we had the same goals the same dreams," said Alejandro Griffen-Diaz.

Alejandro and Jacob Griffen-Diaz are the owners of Jacob Alejandro, a coffee shop on River Street that opened in December.

Jacob trained at the Culinary Institute of America and bakes their pastries fresh every day.

Alejandro said their passion for coffee culture is what makes their shop different than others.
