Crab Cakes Django

1 large red onion

1 fresh pepper

2 stalk celery

Mince and sautéed vegetables in olive oil with 1tablespoon mustard seed

When translucent and soft, cool and mix in 2 eggs, 1/4 cup shredded Parmesan, 1/4 cub bread crumbs and Joe’s Cajun seasoning.

Toss with fork into 1 pound lump crab

Form round balls and dredge in flour, then egg wash and then seasoned breadcrumbs.

Sauté over medium high flame till golden brown on each side.

Serve on bedded greens and garnish with remoulade.
