Southern Fried Chicken
Buttermilk wet dredge:
2 cups buttermilk
1/4 cup ap flour
1 tsp granulated sugar
3 cups AP flour
2 tsp black pepper
3 tablespoons granulated garlic
1 tablespoon onion powder
3 tablespoons Salt
Take one 6 oz chicken breast, butterfly.
Dip FIRST on the flour mixture. Tap the excess flour off. Put into the wet dredge and fully coat the chicken. Let the excess dredge drip off the breast, and place back in the flour. Press the flour onto the chicken to ensure a full coating.
Fry at 375 for 5 minutes, finish an a preheated oven (350) for 2 minutes.
