Schaghticoke woman living culinary dream with food truck, restaurant

Heather Valade’s food truck is called Curvy Girls. It’s a fitting name, because what’s on the menu is bound to put a few pounds on you.
Valade started cooking in high school, loved it and went on to culinary school.

"My last semester, Mohegan Sun actually was looking for interns. They were expanding their business. I managed to get a job over there, and they liked me so much they asked me to stay on board," said Valade.

When the Schaghticoke woman decided to operate a food truck, she knew offerings had to be different.

Along with feeding people, she says having a food truck enables her to get around the Capital Region and attend events where she’s won awards for creativity and met a lot of great people.

Running a business she says isn’t something you do on a whim, but she isn’t a procrastinator either, so when the opportunity also came up to own a new brick-and-mortar restaurant in her hometown, even during a pandemic, she took the leap.
