Green Island farm will use mushrooms to create plant-based bacon

Green Island is now home to the largest mushroom farm in the world.
Ecovative’s CEO hosted the grand opening ceremony on Monday.
He announced the company’s collaboration with the Berkshire Food Co-Op and Cornucopia Natural Wellness Market. The goal is to create plant based bacon from mushrooms.
The bacon is available at the Honest Weight Food Co-Op in Albany.
Ecovative also plans to host bacon food trucks in the fall.
